Lentil and Broccoli Salad

This is one of my favourite's and is my go to salad every time I go to a potluck. It is easy to make, very nutritious and it is a dish that everyone is interested in and enjoys.

Ingredients: 2 can of lentils, 1 cup broccoli, ½ cucumber, 2 cups spinach, 1 avocado, 1 lemon, seasoning

  • Strain lentils and add to salad bowl

  • Cut broccoli, cucumber, avocado and spinach into small pieces

  • Add ingredients to bowl with lemon juice, salt and pepper

  • Stir and combine all ingredients and serve

And YES - the method is that simple, things do not need to be detailed or over explained. Just start and you will find your own way to do it as you go. Believe me, it is how I started and cooking has never been more fun.
